There are several methods of drying and preserving the aAcai Berry that result in an Acai powder but be warned! acNOT ALL METHODS ARE THE SAME! And, as such, not all products are the same. The most common methods are SPRAY drying and BARREL drying. These processes only preserve 30 – 45 % of the
nutritional value of Acai.
Spray drying involves heating the Acai to a very high temperature to remove the moisture. The Acai is often mixed with a carrier solution such as maltodextrin. The resulting product can contain high amounts of maltodextrin. However, maltodextrin will never be listed on the label because it is used in the manufacturing process and is not an added ingredient. This is an FDA loophole! Not only are you getting a product that is NOT really pure Acai, but the high heat used in the process destroys most of the nutritional value of the Acai as well as the
antioxidants
and enzymes. Barrel drying uses even more intensive heat. It involves applying a film of Acai paste to a heated barrel. The film dries and is then scraped off into a powder. The heat used in this process destroys the antioxidants and most of the nutrition of the Acai Berry. Barrel drying is even inferior to spray drying but both methods are far cheaper and faster than freeze drying and thus bump up the profit margins of the companies that use these methods. Most of the Acai you find online, in the market or health food store is processed using a cheaper and less effective methods such as barrel or spray drying. You never want to sacrifice QUALITY when considering your health.
Why is Freeze Dried Acai Better?
Freeze drying is the preferred method of preserving Acai. The berries must be processed shortly after
harvesting
because they spoil within 24 hours. The skin and pulp of the berry is removed from the seed and then immediately freeze dried in a vacuum so that nutrients and live enzymes are preserved. This process is more expensive and takes more time than other methods of drying Acai Berries. Freeze drying is by far the preferred method of preserving Acai Berries.
